Help: Fix CMAKE_HOST_SYSTEM_PROCESSOR use of uname

Currently the document says that `CMAKE_HOST_SYSTEM_PROCESSOR` is the
output of `uname -p` if a system supports `uname`.  Update the
documented behavior to match `CMakeDetermineSystem.cmake` code.
